Happy Hump Day! We’re going to be starting a new series on Taneja’s Bride called “Whet Your Appetite Wednesday!” and today we’re going to discuss baking an egg inside an avocado. It’s delicious AND healthy. What more can you ask for?
What you need?
– Optional: Cheese, Bacon, Chives, Basil, or anything you’d like to top it off with.
Preheat your oven to 425* while you prepare your avocado cups.
All you need to do is cut your avocado in half, remove the pit and scoop a little bit of the avocado’s flesh out, so that your egg fits where the pit was.
You can leave the peel, but I chose to remove it, so that I could dig into it as soon as it was cooked. Crack the egg and slowly let it fall directly into the place of the pit.
I topped it off with a few strands of cheese, and then as soon as the oven was preheated, placed it in the oven.
Let it cook for 15 minutes or longer (about 20 minutes) if you want your yolk to completely set. I did this, but I think I will choose to do it for 15 minutes because I love an overeasy egg.
