Whet Your Appetite Wednesday: Baked Egg in an Avocado

Happy Hump Day! We’re going to be starting a new series on Taneja’s Bride called “Whet Your Appetite Wednesday!” and today we’re going to discuss baking an egg inside an avocado. It’s delicious AND healthy. What more can you ask for?

What you need? KITCHEN (6)
– Avocados
– Eggs
– Optional: Cheese, Bacon, Chives, Basil, or anything you’d like to top it off with.

Preheat your oven to 425* while you prepare your avocado cups.

All you need to do is cut your avocado in half, remove the pit and scoop a little bit of the avocado’s flesh out, so that your egg fits where the pit was.

You can leave the peel, but I chose to remove it, so that I could dig into it as soon as it was cooked. Crack the egg and slowly let it fall directly into the place of the pit.

I topped it off with a few strands of cheese, and then as soon as the oven was preheated, placed it in the oven.

Let it cook for 15 minutes or longer (about 20 minutes) if you want your yolk to completely set. I did this, but I think I will choose to do it for 15 minutes because I love an overeasy egg.

And that’s it! Enjoy!

  1. This sounds delicious!

  2. I’m not much for avocados, but this seems so quick and easy!

  3. I love avocados but I won’t go near an egg. I hope you have more avocado recipes since I’m so uncreative.

  4. Interesting! What does hot avocado taste like? Does it get creamier? I am on a “soft diet” due to diverticulitis, but I may be able to eat this, and I love both eggs and avocados. What do you like about this cooked recipe vs regular avocado with a cooked egg? Sorry for all the questions, but you’ve got me curious! And I love to cook.

    • Honestly, the avocado tastes the same. If you’ve had southwestern eggrolls, it kind of is soft and hot. With this recipe, the egg bakes and becomes one with the avocado. So, it’s definitely a must! It’s delicious! I made it again THIS morning! I added salt and pepper on top and left the peel on. And, I also cooked it for 15 minutes and it made it perfection because it was overeasy and spilled into the avocado. 😀

  5. Wow, this looks absolutely delicious! I am definitely going to try this! Thanks so much!

  6. This is perfect for my keto lifestyle. I’ll have to try it!

  7. Ooh this sounds so yummy!

  8. I’ve never thought about doing this, it looks SO good!! I’m trying it soon, thanks for the idea!
