Cinco De Mayo.


The only way we celebrated was by having a Mexican fiesta for dinner. 🙂

I made enchiladas, which are very simple. Even a beginner cook can whip these up and get all the compliments!!

Corn Tortillas
Refried Beans or Black Beans
Enchilada Sauce of your choice
Cheese of your choice

Toast the tortillas on a pan with little or no oil. When it blisters just a little, remove from the griddle. Warm up beans according to directions. If you are using black beans, you can spice them up by cooking them with some carmelized onions and bell peppers and a little taco seasoning. Put the beans in the tortilla and add a little cheese and roll up. Cover the enchiladas with enchilada sauce and cheese. Bake at 350* for 15 to 20 minutes or until cheese has melted as per your taste. You can garnish with sour cream, cilantro, tomatoes, onions, or whatever your heart desires! Serve with Mexican/Spanish rice, nachos, fresh lettuce, a side of refried beans smothered in cheese. Enjoy! Ole! 🙂
