This dish was made for breakfast A LOT in my household. It’s pretty colorful (Feels literally like a bowl of sunshine) and it’s tasty, to say the least!

1/2 Red Onion Chopped
(Optional) 1 Potato Chopped
1/4 cup of Peanuts, Unsalted
(Optional) Green Peas
1 Tbsp of Cumin
1 Tbsp of Black Mustard Seeds
2 Green Thai Chilies Chopped
1 – 2 cups of Thick Poha (Flattened Rice)
1 Tbsp of Turmeric
1 Tbsp of Ground Coriander Powder
Salt to Taste

Rinse the Poha thoroughly in a colander, let drain and set aside. In a pan, heat oil and sautee onions, potatoes (optional) and green peas (optional) on medium heat. Once sauteed, add turmeric and turn flame to low. Next, add poha in with the sauteed veggies and add green chilies. Allow the poha to turn yellow with the turmeric and add peanuts. Roast a little and add ground coriander and salt. Serve and enjoy!
