Sabudana Khichdi.

Or, you can call it Savory Tapioca. It’s DELISH. It’s something my Mom used to make during Navratri (Fast for 9 days) and I would always look forward to that time to have it.

1 1/2 cups of Sabudana/Tapioca
Crushed Peanuts
Boiled Potato in Cubes
1/2 Tsp of Cumin
1/2 Tsp of Black Mustard Seeds
Salt as Per Taste
2 Green Chilies Cut in 1/2 Lengthwise

In a bowl, soak Sabudana in 1/2 inch of water for about 2 hours – 8 hours. It will triple in size. Once soaked and ready to go, separate them with a spoon as to make sure they do not stick to each other. Put crushed peanuts in a pan and dry roast until fragrant and brown. Remove and set aside. In the same pan, put down 3 tbsps of oil and once hot, put the cumin and black mustard seed, 4 pieces of green chilies, and cubes of boiled potato. Toss in the Sabudana and stir continuously. After Sabudana looks like pearls after about 6 – 7 minutes, add salt and peanuts and stir. Add a little lemon/lime juice for taste (This really helps the flavor of the Sabudana Khichdi, trust me!) and cilantro for garnish (if you wish). Enjoy!!
