Gram Flour (Besan) Crepes/Vegan Omelet.

When it was time for breakfast at my Mom and Dad’s house, we’d either break out the toast, good old-fashioned cereal, and the highly underrated omelet. But, since my Mom is a complete vegetarian (no eggs and no meat – yes, including fish!), she’d make this sometimes, just for a change of pace. This morning, I felt like changing the pace because we’ve had our fill on omelets, toast, and all that wonderful breakfast stuff.

Ingredients:
1 cup of Besan/Gram Flour
1 tsp of Cumin Seeds
1 tsp of Ground Coriander
1 tsp of Garam Masala
1 tsp of Turmeric
1 tsp of Black Pepper
Salt for Taste

In a mixing bowl, put the besan with all the spices and then water down until you get the consistency of pancake batter. On the stove, put a pan with a little oil and heat. Drop the batter and flatten it out with the spoon until thinly covering the bottom of the pan. Let it brown on each side. Top with cilantro, parsley, or whatever you enjoy.
