Spinach & Cannellini Pesto.

Okay, warning to all of you out there – this is not of everyone’s taste. If you LOVE spinach, you WILL love this. It’s more of a hummus than a pesto, but to me, it was amazing. 🙂

Ingredients:
1 cup of Fresh Spinach
1/2 can of Cannellini Beans
Extra Virgin Olive Oil
Chopped Garlic
1 Spoon of Italian Seasoning
Salt and Pepper

Blend all ingredients in a food processor. Keep adding EVOO until you have the consistency you desire. 🙂

I mixed it with pasta and garnished it with julienned spinach. 🙂
