Banana Nut Muffins/Bread

When I was in high school, my Dad used to bring home a 12-pk of muffins from Sam’s Club – Chocolate Chocolate Chip, Banana Nut, and Blueberry. I must say I hovered more over the Banana Nut because it was so moist. I have tried so many times to perfect the recipe – the perfect health factors (whole wheat flour), sweetness, taste and moistness. Eureka! I think I’ve got it! 🙂

What we seem to always have at home (and since the roads are terribly icy, who wants to go drive in a place where these conditions are not normal?)  is whole wheat flour, baking soda, bananas, eggs, honey, sugar, and of course oil. So, I set to work because comfort food is desired in this sort of weather, is it not? I had made samosas (recipe to come) for lunch and they were baked, and I was just in the baking mood. Plus, the oven had been on for my Artisan French Toast anyway. So, I went ahead and baked my samosas, and then proceeded to make my delicious, moist, healthy banana bread.

I followed this recipe from to a T except I added 1/2 honey and 1/2 brown sugar, and I must say it made it just perfect. The healthiness of the whole wheat thrilled me, and I am definitely going to make this again! 🙂
