Veggie Biryani.


A dish that doesn’t need a buddy, er… side dish! Let’s just kick off with the amazing, delicious recipe.

1 Medium Onion
1/4 Cup Sweet Corn
1/4 Cup Green Peas
1/4 Cup Cauliflower
1/4 Cup Green Beans
5 – 6 Fingerling Potatoes Quartered
2 Spoons of Melted Butter or Canola Oil
1 Inch Ginger Minced
1 Cup Cooked Rice

Dash of Cinnamon
1 Teaspoon of Coriander
1 Teaspoon of Garam Masala
Salt as per Taste
1/2 Teaspoon Ground Cumin
1/2 Teaspoon of Ground Carom Seeds (See Indian store for spice)

Put the chopped onions, potatoes and the ginger into a pan and sauté either with the melted butter or canola oil. Sauté until caramelized. Proceed to add all the other vegetables. Keep stirring until vegetables are cooked. Add the cooked rice (See how to cook the rice here) and stir until blended with the vegetables. Add the remaining spices and stir and let sit on low heat for 5 minutes.

And, there you go, you have a meal with almost all your basic food groups in it. Add a dessert if you wish, and enjoy! 🙂
