Easy-Peasy Pasta & Potatoes.


This pasta doesn’t even require a recipe and it tastes oh-so-gooood AND fresh!

All you need are chopped tomatoes, extra virgin olive oil, Italian seasoning (mixture of Rosemary, Oregano, Basil, etc.) and whole wheat pasta (any type you want) – we used penne, and fresh mozzarella chopped similarly to the tomatoes, black pepper, red crushed pepper. And, ta-da, stir and you’re DONE!

For a side dish, another recipe, Easy-Peasy Potatoes:

Rub extra virgin olive oil over washed fingerling potatoes with rosemary, black pepper and salt, and bake for 20 – 25 minutes or until nice and golden brown at 500*.
