I put my own twist on the recipe by Sunny Anderson from The Food Network. I used whatever I had available, so my recipe was sweet and simple.
1 teaspoon of Sugar
1 teaspoon of Cinnamon
1/2 teaspoon of Vanilla Extract
1 tbsp of Butter (Melted)
Mini Fillo Shells
1. Roast almonds and walnuts on baking sheet as per Sunny Anderson’s directions – 8 minutes at 350*.
2. Let cool, then put the roasted almonds and walnuts (these were all I had in my pantry at the time, you surely can use others!) in food processor with sugar, cinnamon, butter, vanilla extract, and process.
3. Take the mixture and scoop into the fillo shells, add a small dollop of whipped cream and top with whatever you like. I put blueberries and chocolate chips. YUM!
There was no need to bake at all, but one day, I definitely want to try the recipe above and see how they turn out! 🙂
